masu (trout) sushi

I was recently served Tasmanian sea trout sushi, which was really yum; it reminded me of artic char in both taste and texture. I did a little research and, apparently, char and sea trout are cousins of salmon. Has anyone else been served with sea trout (and from where if you remember) and/or char sushi/sashimi? I previously ate premium sushi/sashimi quite often and don’t remember being served sea trout before, but then again, I didn't take notes back then.

    If I'm remembering right, I had trout sushi years and years ago in LA, and sadly can't really tell you much about it at the moment, I was a wee young un back then.

    It was a staple at Anzu, especially in the sashimi course toward the beginning of the omakase. With nigiri, Kazu-san usually paired it with Copper River Salmon (a fish that was MORE expensive than wild-otoro due to its scarcity).

    The orange and white bands were very similar to salmon, but the orange in Masu was a little darker. The taste is also similar at first, but then melts into a nuttier, richer flavor.
